Corn Upma is an interesting twist to the Semolina (Rava/Sooji) Upma, providing a sweetness to the recipe and our way of celebrating seasonal produce.
Rains have gained much momentum in past few weeks. While the month of June was subdued, July has made up for the deficit in Maharashtra. As per IMD, Maharashtra have been leading in rain bounty among all states with the state recording about 41% excess rainfall. It’s a good news especially for drought prone areas like Marathwada and Vidharba.
With that quick update about the monsoons, let me hop back to the post. I absolutely love Corn. These sweet little kernels are not only a treat to eyes but are a much awaited seasonal produce during monsoon at my home. Indians adore corns and this love is evident from the mushrooming growth of street carts selling corn on the cob and roasted corns on their carts. Devouring into these roasted corns laced with butter and spice mix of chili and salt, bought from these roadside vendors is a part of our memory for each one of us.
Often, my father would buy these sweet corns in bulk at inexpensive rate and we would know our breakfast and snacks for next few days would be made of corns. Sometimes, he would roast these corn on the cob and serve us hot and at other times Mom would make a savory snack by tossing these corn kernels in a pan with veggies and spices. I would often prefer former than later as later would call for hours of hard work and labor of removing corns from the cob and this menial task was often entrusted upon me. Unaware of any hacks in those days (how I wish internet would have proliferated our lives then) I would resort to removing these kernels manually and boy oh boy it was some task. I would do it with my eyes firmly glued on to my favorite TV show and my hands deftly plucking out the kernels from the cob. In spite of hours of toiling, my love for corns never ceased. Such was this love- pure and timeless.
Having seen a little over 3 decades now, my love for corns has grown deeper. Every monsoon, as it makes an appearance in market, I feel delighted beyond words and this monsoon is no different. I have already begin using corns in my recipes quite generously. You may want to check Corn Aloo Chaat and Corn Mayo Sandwich. This list is going to grow bigger this year as I planning to come up with a Chaat series. Oops, did I just divulge my plan a week sooner.
Coming back to Corn Upma. Having made Vegetable Upma on gas stove, I have made today’s recipe in Microwave. Corn Upma is a delicious and nutritious breakfast and snack recipe that can keep you full for long time. This microwave version can be cooked in less than 20 mins. - 1 Cup=200gms Rava/Suji (Semolina)
- 1 Cup=100gms Sweet Corns Kernel
- 1 small=60gms Onion-finely chopped
- ¼th Cup=50gms Carrot-finely chopped
- ¼th Cup=50gms French Beans-finely chopped
- 1 tsp Mustard Seeds
- 2 Green Chilies-finely chopped
- ½-inch Ginger root-grated
- 2 tbsp fresh Coriander leaves-chopped
- 1 tbsp Lime Juice
- ½ tsp Kashmiri Red Chili Powder
- Salt
- 5-6 Curry Leaves
- Cooking Oil
- 3 Cups Water
- We will use a 750 ml Microwave safe bowl with a lid. Put Semolina in the bowl and add 2tbsp Cooking Oil and mix it well. Roast in microwave for 4 mins on High heat
- a) Mode: Micro b) Power: 900W (High) c) Timer: 4 mins d) Press Start. Cook uncovered
- Remove after 2 mins and stir well. Keep the bowl back in Oven and resume the timer. Stir again after 1 min
- Keep the roasted Semolina aside
- In the same Microwave safe bowl, put 2 tbsp Cooking Oil. Add mustard seeds, curry leaves and cook on high heat for 4 mins
- a) Mode: Micro b) Power: 900W (High) c) Timer: 4 mins d) Press Start. Cook uncovered
- After 4 mins, add grated Ginger and chopped Chilies
- a) Mode: Micro b) Power: 900W (High) c) Timer: 2 mins d) Press Start. Cook uncovered
- After 2 mins, we will now add all the veggies in the bowl. Add chopped Onions, chopped Carrots, chopped beans and Sweet Corn Kernels. You can also add Green Peas if you like. Add salt to taste and mix well. Cook on High heat for 4 mins
- a) Mode: Micro b) Power: 900W (High) c) Timer: 4 mins d) Press Start. Cook uncovered
- Veggies get cooked and yet retain its crunch in 4 mins of cooking. Now add red chili powder (optional) and chopped coriander leaves. Add roasted Semolina and mix well. Add water in ratio of 1:3 . For 1 Cup Semolina, add 3 Cups of water. Ensure there are no lumps in this mixture. Stir well. Cook covered for 4 mins on High heat
- a) Mode: Micro b) Power: 900W (High) c) Timer: 4 mins d) Press Start. Cook covered
- Remove after 4 mins for a stir. Add lime juice. Do not worry about the excess water that you can see in Upma. Semolina will soak all the water after stirring
- Now, cook uncovered on high heat for 1 min
- a) Mode: Micro b) Power: 900W (High) c) Timer: 1 min d) Press Start. Cook uncovered
- Corn Upma is ready to be served. Let's serve hot
