Pink Sauce Pasta recipe

Pink Sauce Pasta

Pink Sauce Pasta, also known as Tomato and Cream Pasta is a popular comfort meal that I often resort to on my weekends.

I am often, posed with a query of How to boil Pasta without turning it into a mess. At the end of this blog, do refer to the Tip section in which we have discussed few guidelines to be followed to prevent Pasta turning into mess.

Pink Sauce Pasta

In a large pan, boil water. For 1 Cup Pasta, we will use 5 Cup of water. Add 2 tsp Olive Oil in the boiling water and add 1 tbsp Salt

As water starts boiling, add pasta. We are using Durum Wheat Pasta and it takes 12-15mins for getting cooked. Always follow the cooking instructions written on pasta packet. Maida (Plain flour) Pasta takes 10 mins to cook. While Pasta gets boiled, lets Blanch vegetables.

In a large pot, boil water. Add 1 tsp Sugar. Add Vegetables (Broccoli and Bell Peppers). Cook only for 2 mins. After 2 mins, remove veggies.

Drain the water and transfer it to ice-water bath. Transfer veggies to Ice-cold water. This will stop the residual cooking and will retain the crunch in veggies.

 Drain the water and transfer it to ice-water bath.

We have cooked pasta for 13 mins. Pasta is al dente cooked. Remove it from the water and transfer to a large plate. Spread cooked pasta in a plate and drizzle some oil on top

In a large pan, add 2 tbsp Olive Oil. Add Butter and allow it to melt.

Add Onions and cook until it becomes translucent

After 2 mins of cooking, add chopped garlic. Cook until Garlic becomes brown at its edges.

After a min, add chopped tomatoes.

Add Tomato Puree and some Salt. Cook until tomatoes become little soft.

After 2-3 mins of cooking, add tomato ketchup, add Chili Flakes

Add grated processed cheese and mix well.

After all the ingredients are mixed, now add fresh cream. Before adding cream, turn off the heat. After adding cream, mix quickly. This prevents curdling of cream.

Put Pan back on heat. Pink Sauce is almost ready. Now add White Pepper Powder. Add Basil leaves. Shred roughly. White pepper and Basil have intense flavor and aroma. So be careful while adding it to the dish.

Add blanched vegetables and coat it with the sauce. Add boiled pasta and mix well. Pasta in Pink Sauce is ready

Ingredients
  • 1 Cup=100gms Penne Pasta
  • 100 gms Veggies (Broccoli, Red and Yellow bell peppers)
  • 1 small=50gms Onions (cut into small cubes)
  • 1 small=70gms Tomatoes (cut into small cubes)
  • ⅓rd Cup=70ml Fresh Cream
  • 2 medium sized=180gms Tomatoes pureed
  • Olive Oil
  • Salt
  • ½ tsp White Pepper Powder
  • 2-3 Olives (sliced)
  • 1 tsp Butter
  • 1 tbsp Tomato Ketchup
  • 4-5 Cloves of Garlic (finely chopped)
  • ½ tsp Chili flakes
  • 1 cube of processed cheese
  • Basil leaves

How to Boil perfect pasta:

a) Follow ratio of 1:5 while boiling pasta. For 1 cup Pasta, boil 5 Cups of water. This ensures that the pasta does not stick to each other and gets properly cooked.

b) Add 1-2 tsp Oil in boiling water. This ensures that the pasta does not stick to each other and remains separated

c) Always season water with Salt while boiling. If you do not add salt while boiling pasta, it may taste bland

d) Adding Sugar while Blanching, helps retain color of vegetable

e) Cook Pasta till it reaches al dente consistency. Al-dente means to the bite or to the tooth. While boiling you must bite into cooked pasta and it must be firm to bite. It must not be mushy. Mushy means overcooked pasta
