Matki Chaat is our healthy and nutritious take on Chaat which has earned a reputation of being an oily, spicy and fried. Well if you think Chaat is synonymous to unhealthy food, you will be in for a pleasant surprise with Matki Chaat.
Matki or Moth beans is a rich source of protein in vegetarian food and if you are gym-goer, on lookout for vegetarian protein sources, then this bean may thrill you. Available quite easily in grocery stores, it is one of the drought resistant crop that can survive in water-scarce condition. Besides being rich in protein, Matki is also rich in vitamins and fiber. Being high in fiber, this bean can help fight constipation.
Matki or Moth bean is part of several dishes in Indian Cuisine and more importantly in Maharashtrian food. There are quite a few recipes that are made with Matki, one of the most important one being Misal. Matki dry veg preparation, Matki soup, Matki Salad are some of the other recipes.
Matki Chaat is our healthy and nutritious take on Chaat. Sprouted and steamed Matki is used in this recipe. sprouting and steaming (cooking) are two most important steps for enhancing the nutrition quotient of legumes.
Sprouting improves the Vitamins and absorption of minerals of legumes. Its helps in reducing anti-nutrients and prevents problems related to digestion which are more common on consumption of dried legumes.
Sprouted Matki are just steamed to soften the legumes for consumption. However, do not overcook it. Overcooking Matki can result into its skin coming off and result into loss of nutrients. To enhance the health quotient, we add different veggies-cucumber, carrots, tomatoes and onions, in this preparation. You can add any vegetable of your choice to this preparation. Then comes the spices which are added to spice up the otherwise bland preparation. We have added about 1/2-1 tsp of Achari masala as well to impart an added zing to the Chaat. It’s completely optional and you can skip it from the preparation.

- 1.5 Cup=150gms Sprouted Moth bean
- ¼th Cup=50gms Tomatoes-finely chopped
- ¼th Cup=50gms Carrot-finely chopped
- ¼th Cup=50gms Onions-finely chopped
- ¼th Cup=50gms Cucumber-finely chopped
- 2 tbsp fresh Coriander Leaves-finely chopped
- 1 tbsp Lime Juice
- 1 Green Chili-finely chopped
- 1 tsp Chaat Masala
- Salt
- ½ tsp Achaar/Pickle
- Nylon Sev-as needed
- We will steam sprouted Matki in a pressure cooker. Transfer Matki to a pressure cooker. Add 1 Cup water, some Salt. Put pressure cooker on heat now
- Put pressure cooker on high heat until pressure builds up. As pressure builds up, remove pressure cooker from the heat. Matki will get cooked in the pressure. Do not take whistles-as it will result into Matki's skin coming off. You may even use steamer for steaming Matki. Switch off the heat and allow pressure to come down completely
- Steamed and cooked Matki is ready. Add chopped carrots, chopped tomatoes, chopped onions, chopped Cucumber, chopped Coriander leaves, chopped green chilies, Chaat Masala, Lime juice, Salt to taste and Pickle. You can add any Achaar in this recipe
- Mix well. Matki Chaat can be served now. You can also refrigerate this Chaat before serving.
- Add some Nylon Sev on top to make the Chaat crunchier. You can also serve it with Papdi or Mathri
