Veg Pulao or Subz Pulao is a quick recipe that you can prepare in Microwave in less than 30 mins. We already have a less elaborate preparation in form of Spicy Pulao in microwave. Today’s recipe is bit more elaborate in terms of amount of veggies and spices added to it.
Rice preparations like Pulao or Biryani are my favorite and I often try accommodating a couple of rice preparations in my Monthly schedule of recipes. My love for Rice preparations becomes evident if you have a look at the playlists of Rice preparations and Biryanis on this blog. This fascination also manifests itself in form of Books that feature in my book-shelf and on my kindle. I have few books in my collections that solely focus on Biryanis and Pulaos.
Microwave often has to suffer from few misconceptions like ‘Microwave can only be used for re-heating’ or ‘Microwave can only be used for basic cooking’ and the following one can be termed as a corollary to previous one “Microwave can’t be used for making any elaborate preparations”. To clear the air of doubts, we started this weekly series of “Daily Indian Cooking with Microwave” that features several recipes ranging from Breakfast/snacks, starters and Mains. This recipe is a part of this series. I also encourage my readers/viewers to pose queries that they think will help them shed their inhibitions related to Microwave and take up this essential kitchen skill.

Serves: 3-4

- 1 Cup=200gms Long Grain Basmati Rice (washed and soaked in water for 30 mins)
- 1 medium sized=90gms Onions (sliced into lengths)
- 1 medium sized=60gms Tomato (finely chopped)
- ¼th Cup=40gms Fresh/Frozen Green Peas
- ¼th Cup=50gms Carrot (cut into cubes)
- ¼th Cup=40gms Cauliflower florets
- ¼th Cup Fresh Coriander Leaves (chopped)
- 1 medium sized=50gms Potatoes (cut into cubes)
- 1½ tbsp Ginger-Garlic Paste
- 2 Green Chilies (sliced)
- ½ tsp Turmeric Powder
- 1 tbsp Red Chili Powder
- 1 tsp Coriander Powder
- 1 tsp Garam Masala Powder
- Salt to taste
- 2 tbsp Cooking Oil
- Take a Microwave Safe deep bowl with a lid. Put Cooking Oil, Onions and Green Chilies and Mix well
- Microwave on High heat for 3 mins
- a) Mode: Micro b) Power: High 900W c) Timer: 3 mins d) Press Start Note: Cook uncovered
- After 3 mins, Onions become soft. Now add Ginger-Garlic Paste. Add some chopped Coriander leaves and mix
- Microwave on High heat for 2 mins
- a) Mode: Micro b) Power: High 900W c) Timer: 2 mins d) Press Start Note: Cook uncovered
- Ginger-Garlic Paste gets cooked in 2 mins. Now add Tomatoes, Red Chili Powder, Turmeric Powder, Coriander Powder and Salt and mix well.
- Microwave on High heat for 3 mins
- a) Mode: Micro b) Power: High 900W c) Timer: 3 mins d) Press Start Note: Cook uncovered
- Masala is well cooked. Now we will add veggies. Add Green Peas, Potatoes, Cauliflower and Carrots. You can also add Capsicum and Mushrooms. Mix well
- Microwave on High heat for 3 mins
- a) Mode: Micro b) Power: High 900W c) Timer: 3 mins d) Press Start Note: Cook uncovered
- After 3 mins of cooking, add soaked rice. Drain all the water before adding it to bowl. Add Garam masala and fresh coriander leaves and mix gently.
- We will add 2 Cups of water for 1 Cup rice.
- Microwave on High heat for 13 mins
- a) Mode: Micro b) Power: High 900W c) Timer: 13 mins d) Press Start Note: Cook uncovered for initial 6 mins. Pause timer after 6 mins. Place the lid (remember to wear gloves). Resume timer and cook for remaining 7 mins
- Subz Pulao is ready. Give it a standing time of 5 mins
- Tip of the Day: Usually, we prefer aromatic Biryani rice which is expensive. Everyone cannot afford expensive high grade Basmati rice. You can also buy a medium grade Basmati rice and store it in an air-tight container. Add 5-6 cloves (for 1 kg rice) with this rice. Cloves will make this rice aromatic and your pulao will be flavorful
