Egg Curry-Anda Curry

Egg Curry or Anda Curry is one of my favorite comfort foods particularly since it can be quickly made in a microwave in just 15 mins.

Dear readers, if you have been reading my blog for quite some time now then you are well aware of my strong affection for Egg. Eggs are an essential part of my weekly menu. It not only serves to provide me with an easy breakfast option during weekdays in form of boiled eggs, Omelet- Bread, scrambled eggs, egg sandwich but also is a wonderful ingredient for a delicious weekend lunch.

If like me, you too get thrilled by the idea of Sunday afternoon nap, then you would love to own this recipe in your repertoire. I like to prepare it over the weekends and serve with some steamed rice and devote some saved extra mins to that elusive afternoon nap.

Egg Curry-Anda Curry

Sunday’s at my place is an eggy affair as eggs form part of Breakfast and Lunch. If I am starting my day with some boiled eggs (or boiled egg Bhurji) then I like to boil few extra eggs and reserve them for my lunch later. The lunch is typically, Egg Curry, Fried Egg Masala or Kerala style Nadan Egg Roast. Each of these preparations are usually accompanied with steamed rice.

Egg Curry in Microwave-Anda Curry in Microwave-Dhaba Style

Prep time:  10 mins

Cook time:  16 mins

Total time:  26 mins

Serves: 3-4

Ingredients
  • 4 Hard Boiled Eggs
  • 1 Large=125 gms Onions-chopped
  • 2 Medium=150 gms Tomatoes-chopped into large cubes
  • ½ Cup fresh Coriander leaves
  • Cooking Oil
  • 8-10 Cloves of Garlic
  • reen Chilies sliced
  • 1-inch Ginger root
  • ½ tsp Mustard Seeds
  • 1 tsp Cumin Seeds
  • ¼ th tsp Asafoetida Powder
  • ¼ th tsp Turmeric Powder
  • 3 tsp Red Chili Powder (Spicy or Kashmiri)
  • 1 tsp dry Coriander Powder
  • 1 tsp Garam Masala Powder
  • Salt
Instructions
  1. We will make a Onion paste-Grind Onions, half quantity Coriander leaves, Garlic, Ginger and Chilies into fine paste. Grind Tomatoes in puree
  2. Onion paste is ready. we have used ¼th Cup water while grinding Onion paste. Tomato puree is also ready
  3. Take a Microwave safe bowl (MWS) with a lid. Put 2 tbsp Cooking Oil. For Tadka add Mustard Seeds, Cumin Seeds and Asafoetida Powder and mix well. Microwave on high for 4 mins
  4. Place the bowl at the center of glass tray a) Mode: Micro b) Power: High (900 Watt) c) Timer: 4 mins d) Press Start Cook uncovered.
  5. In the bowl, add turmeric powder and Onion paste. Mix well. Cook on High in Microwave for 4 mins.
  6. Place the bowl at the center of glass tray a) Mode: Micro b) Power: High (900 Watt) c) Timer: 4 mins d) Press Start Cook uncovered.
  7. Onion masala is now well cooked. Add Red Chili Powder, Coriander Powder, Garam Masala Powder, some chopped Coriander Leaves, Tomato Puree and Salt to taste. Mix all the ingredients well. Cook on High in Microwave
  8. Place the bowl at the center of glass tray a) Mode: Micro b) Power: High (900 Watt) c) Timer: 4 mins d) Press Start Cook uncovered.
  9. After 4 mins, remove the bowl from Microwave. Masala is now well cooked. Add water for gravy. Adjust the consistency of gravy as desired. We have added total 1 Cup water. Add Salt to taste and mix well. Cover and cook on High in microwave
  10. Place the bowl at the center of glass tray a) Mode: Micro b) Power: High (900 Watt) c) Timer: 2 mins d) Press Start Cook Covered.
  11. Curry has cooked well in 2 mins. Uncover. Mix well. Now add Eggs in the gravy (cut into halves). Ensure Eggs are well coated in the gravy. Cook on High in microwave
  12. Place the bowl at the center of glass tray a) Mode: Micro b) Power: High (900 Watt) c) Timer: 2 mins d) Press Start. Cook uncovered.
  13. Quick and easy Microwave Anda Curry is ready. It took us only 16 mins to make the dish in microwave. This is quick dish to make in morning rush hours
