Howdy readers. It’s been a hectic week for us. The week has unfolded at a frenetic pace. While the weekdays were packed with professional commitments, weekend saw us packing our bags and heading to a holiday destination for our photography excursion.
We stayed put at Morachi Chincholi, a place which is a natural habitat for peacocks. It was an exhilarating moment to see these birds from such close range. It was also a satisfying experience to see wild and human co-exist peacefully. The villagers take pride in the fact that birds do not fear them and they have co-existed peacefully for centuries. Though, this place is fast acquiring a reputation in wild-life photographers and birders, I hope this place can retain the pristine landscape and beauty that tourist places fail to hold on to as they get popular. I will write about this trip in more detail in a separate post.
Let’s get back to the recipe for this week- Cabbage Carrot relish. This has been my go to dish that I find myself including in my diet plan every time I lose focus and end up gaining couple of undesirable pounds. With so much internet proliferation everyone has so much weight-loss and health tips at their disposal that stating health benefits of cabbage and carrots is a redundant exercise. However repeating the obvious just to hammer the point home will not do any harm. The importance of cabbage as a weight loss essential item was made famous with cabbage soup diet. The benefactors of this diet claim that cabbage has helped them shed 10 pound in a week. While that claim can be debated, the effectiveness of cabbage is a universally accepted fact in medical fraternity. Being rich in anti-oxidants, Vitamin C, calcium, potassium, Vitamin A and Vitamin K cabbage is also high in fiber which keeps us full for a longer duration. Though there are several ways cabbage can be included in diet, cabbage-carrot relish is one delicious way of consuming raw cabbage.
The other principal ingredient carrot is equally rich in nutrients and vitamin A and again assists in weight loss exercise. It is rich in Vitamin C and fiber which makes its inclusion in diet plan a must. To cut down the blandness of cabbage and carrot and to add some flavors this relish is tempered with some basic spices.
The recipe is fairly simple and can be made real quickly.
