“Life is great, Cheese makes it better”. Daryl Wood Gerber pseudonym Avery Aames affinity towards cheese is hardly a secret. It could be anyone’s guess what must have prompted her to pen down that wonderful quote in “The Long Quiche Goodbye”, but I guess it must have been a moment of felicity that led her to associate cheese with happiness in life. I couldn’t agree more.
Last Sunday, I had one such moment of bliss and in that rapturous surrounding I decided to make this recipe. It had rained that day, rained the whole preceding night following an extended duration of anxious wait. As we grew restive, rains had come just in time on first morning of the July. I woke up to pattering of rain drops on my window panes, crescendo and diminuendo of that sound had filled up the surrounding with a calm, relaxing symphony. I felt elated. Rains get me excited, they fill me with contentment and bliss to the extent that nothing else can. I dallied around in the balcony for longer than usual, watching kids loitering on the streets, in the process I had sipped on 2 cups of coffee. Half way through my second cup of coffee, this recipe had begun to linger in my thoughts and by end of my cup of Robusta, the recipe was firmly planted in my mind.
I had tried this dish few times already as an entrée during my dinner in Italian restaurants in Pune. Most of the restaurants in Pune that serve Italian, vouch for their authenticity but over the years I have zeroed onto two restaurants that I can safely head to satiate my cravings for Italian food. This is a fairly easy preparation and you can get done with it in no time. Cheddar cheese goes well into this preparation, however it is important to have this sauce with crispy nachos while it is still warm and has smooth texture. As it cools down it becomes firmer and of course nobody would like their cheese sauce to be firm.
The seasoning that goes into making this sauce can be altered to suit one’s taste. We have seasoned this sauce with red chili powder, salt, onions and garlic- a fairly reduced list you would say, but trust me this is all you need to make this preparation. Didn’t I say earlier you can get done with this recipe in no time? You can choose to pour them on bed of Nachos or as I like, serve them separately.
Make this Cheesy preparation in these rains and celebrate the spectacular gift called life. As Avery Aames says, cheese is only going to make it better.

- 125 grams grated cheddar cheese
- 250 ml milk
- 3 tbsp butter
- 1 small onion finely chopped
- 3-4 cloves of garlic minced
- ½ tsp red chili powder
- 1 tsp salt
- In a pan, put butter. Allow the butter to melt.
- Add minced garlic and chopped onions. Allow onions to become tender.
- As onions turn soft, add milk to the pan.Add red chili powder and salt to taste.Simmer the milk on low heat.
- Add cheddar cheese to simmering milk.Add cheddar cheese to simmering milk.In about 5 minutes, cheese melts completely.Sauce has attained smooth texture and can be served immediately
- Cheese Dip can be poured on bed of Nachos or can be served separately.
