Today we share a masala that originates from the coastal region of Malvan and coastal kitchens of Malvani folks. If you have salivated over the aromas and taste of Konkani recipes, then folks secret is out of the box. Let’s see how this magic blend is made.

Malvani Masala- My Kitchen Heirloom

Serves: 350 grams

Ingredients
  • 200 grams dried Byadagi red chilies. These chilies add to the color of the masala.
  • 50 grams dried Pandi chilies for spiciness
  • 7 grams Cumin seeds
  • 6 grams Teppal
  • 7 grams Black cumin
  • 9 grams Poppy seeds
  • 5 grams fenugreek seeds
  • 3 grams cloves
  • 4 grams Nutmeg
  • 7 grams Fennel seeds
  • 6 grams whole coriander seeds
  • 6 grams black cardamom
  • 3 grams Star Anise
  • 2 grams Mugwort
  • 6 grams cinnamon stick
  • 3 grams mace
  • 10-12 Bay leaf
  • 18 grams Turmeric root
  • 2 grams lichen(black stone flower)
  • 3 grams green cardamom
  • 7 grams Nagkesar
  • 7 grams asafoetida rock
  • 5 grams Mustard seeds
  • 4 grams peppercorns
Instructions
  1. In a large pan, we start with roasting byadagi red chilies.We must not brown the chilies but only roast them slightly till they release aroma.
  2. You can roast chilies in batches if roasting in large quantities. Roasting time: 4 minutes. Remove the chilies from Pan and keep it aside.
  3. Let's roast Pandi red chilies.We must not brown the chilies but only roast them slightly till they release aroma.Roasting time: 2 minutes.Remove the chilies from Pan and keep it aside.Let's roast other ingredients.
  4. Roast all the spices one by one.We will dry roast the ingredients in a smaller pan until the spices release aroma.
  5. Coriander seeds:Roasting time: 2 minutes
  6. Cumin seeds: Roasting time: 1 minute
  7. Peppercorns: Roasting time: 1 minute 30 seconds
  8. Black cumin seeds: Roasting time: 1 minute
  9. Mustard seeds: Roasting time:1 minute
  10. Fennel seeds: Roasting time: 1 minute 30 seconds
  11. Fenugreek seeds: Roasting time: 30 seconds
  12. Teppal: Roasting time: 1 minute
  13. Cloves: Roasting time: 1 minute
  14. Nagkesar: Roasting time: 1 minute
  15. Green cardamom: Roasting time: 1 minute
  16. Poppy seeds: Roasting time: 1 minute 30 seconds
  17. Star anise: Roasting time: 45 seconds
  18. Mugwort: Roasting time: 20 seconds
  19. Mace: Roasting time: 30 seconds
  20. Lichen(Stone flower): Roasting time: 45 seconds
  21. Bay leaf: Roasting time: 1 minute
  22. Cinnamon sticks: Roasting time: 1 minute 45 seconds
  23. Always crack open black cardamom before roasting.black cardamom: Roasting time: 1 minute 30 seconds
  24. Nutmeg must be coarsely powdered before roasting.Nutmeg: Roasting time: 10 seconds
  25. Turmeric root must be crushed before roasting.Turmeric root: Roasting time: 30 seconds
  26. Finally asafoetida rock must be fried.Heat some oil and turn off the flame.Now add asafoetida to the oil and fry until it changes its color.Frying time: 1-2 minutes.We will let all these spices cool down before we grind them together.Oil can be used for other recipes.
  27. As chilies cool down, grind them together.Remember we are not using ANY WATER.
  28. Let's grind other spices together.Remember we are not using ANY WATER.
  29. Finally combine both the powders and blend them together one last time.
  30. We have made 350 grams Malvani Masala.Malvani Masala can be used to make many Konkani recipes

    Hello Smita, I live in the US where mugwort is difficult to come by. What form of mugwort have you used and also can I use dried mugwort leaves that is sold on Amazon? If so how much of the leaves should I use? Thanks, Shilpa.

      Thanks Shilpa for stopping by. I have used Mugwort flowers which adds little fragrance and sweetness to masala. I checked on Amazon and they are selling mugwort dried leaves. Leaves are quite bitter in taste and they may spoil the flavor of masala. I would suggest you to skip the mugwort if they are not available. Your masala would still come out rocking 🙂

      Kavita first of all I would like to thank you for stopping by and your interest is really praiseworthy that you are going to try this masala in your kitchen. I can assure you that your masala would turn out just awsome. Let me tell you that Teppal is available online on AMazon India. Teppal is the core ingredient, hence try not to miss it! Mugwort is difficult catch though. I have procured these masalas in Pune’s wholesale spice market. I think you would get them locally in Delhi spice market! But don’t worry, you can skip Mugwort and still your masala will be rich in flavors! :-)Once again thanks for your lovely comment! Happy reading, enjoy cooking!

      Thanks Suma for stopping by and for your wonderful comment! Let me tell you about Mugwort – Mugwort is called as Maipatri in Marathi, it lookes like Mace that is Javitri but slight bigger and reddish outer skin. http://dryfruitworld.com/pages/spices/Maipatri.php
      Its widely used in Western coast masala blends. You may find it in online store or wholesale spice markets in your region! If its difficult to get then just skip it, no issues! 🙂 Your masala would taste great !
      This masala is widely used in Konkan part of Maharashtra, specially in Ratnagiri- Malwani kitchens. Kindly check our playlist on the blog – Konkan recipes where you would find many fish fry recipes, stir fry veggies and usal recipes where you can use this masala:-)

    Hi smita,

    Is it possible to give these measures in teaspoons or tablespoons?
    since I don’t hv a digital weighing scale its a bit difficult to guess the weight of these ingredients at home.
    Would like to give this a try soon.Thank you.

      Hi Vandana, please find below the measurements in spoon :

      1) 200 grams dried Byadagi red chilies. These chilies add to the color of the masala.
      2) 50 grams dried Pandi chilies for spiciness
      3) 1 tbsp Cumin seeds
      4) 1 tbsp Teppal
      5) 1 tbsp Black cumin
      6) 1 tbsp Poppy seeds
      7) 1 and 1/2 tsp fenugreek seeds
      8) 1 and 1/2 tsp cloves
      9) 1 Nutmeg grated or crushed
      10) 1 tbsp Fennel seeds
      11) 1 and 1/2 tbsp whole coriander seeds
      12) 15 black cardamom
      13) 3 Star Anise
      14) 1 flower of Mugwort
      15) 8*2.5 cm cinnamon stick
      16) 1 flower mace
      17) 10-12 Bay leaf
      18) 3 Turmeric root (2 inches each)
      19) 1 tbsp lichen(black stone flower)
      20) 6-8 green cardamom
      21) 1 tbsp Nagkesar
      22) 1 medium sized asafoetida rock
      23) 1 and 1/2 tsp Mustard seeds
      24) 1 and 1/2 tsp peppercorns

      let me tell you this is my mom’s recipe , she always makes in bulk . do prepare this masala ,I guarantee you would love it 🙂

        Hi Smita. I made this masala. I had to skip mugwart as no one knew of it. Now I have found it and I c ouldnt get pandi chilly so I substituted bhedgi and kashmiri. Yet the masala was awesome. My sons are crazy abt malvani cuisine.
