Aloo Matar Sandwich- Masala Toast Sandwich

Aloo Matar Sandwich

Aloo Matar Sandwich is a popular breakfast-snack recipe that could easily become your kids delight. Having this Sandwich recipe in your repertoire would go a long way especially when it comes to fulfilling your child’s evening hunger pangs.

Wiki has an elaborate definition for what does Sandwich mean? It goes like this, “A sandwich is a food typically consisting of vegetables, sliced cheese or meat, placed on or between slices of bread, or more generally any dish wherein two or more pieces of bread serve as a container or wrapper for another food type.“

Having grown up in India of 90s, which had opened its doors to liberalization, we were fortunate that our mothers had begun to acquire fragment of knowledge from global cuisine. My Mother started to pack them for my picnic lunch. Sandwich types varied from Chutney Sandwich, butter & jam sandwich to a simple tomato, cucumber & boiled potato sandwich. Some of my classmates belonging to upper crust of middle class who could afford to buy an electric grill toaster, added to our knowledge that there is another variant called toast sandwich. That’s how gradually Indians have accepted this globalized food in their daily eating.

The extent to which sandwich had proliferated in a Mumbaikar’s life was evident from the fact that a local phrase was invented “sandwich ho jana” which referred to mammoth crowd in a Mumbai local that could get you squeezed from every direction.

Though The Wall Street Journal has described sandwich as Britain‘s “biggest contribution to gastronomy”, I would say Indians have imparted their local flavors into it and made it the best comfort food all over internationally.

So today we are sharing with you the recipe of Aloo Matar toast sandwich that takes me on a trip down the memory lanes- memories of me with my friends in a narrow by lanes outside my school campus. 4 of us would dig into a single sandwich bought from contribution that came from our pockets. It taught us a very important lesson of our lives- “Sharing is Caring”

Let’s go through the recipe and relive those moments one more time.

Grind Ginger, Chilies and Garlic into a coarse paste (use 1-2 tbsp water)

Mash Boiled potatoes with a masher to get rid of all the lumps.

Let’s make the filling for the sandwich. Heat 2 tbsp Cooking Oil in a pan. Add 1 tbsp butter. Allow butter to melt completely. Add Mustard Seeds and allow it to splutter.

Add Cumin Seeds, asafoetida powder and chopped Onions. Let Onions become soft

Onions become soft in about 4 mins

Add Turmeric Powder,Ground Masala paste and Coriander leaves and mix well.

After 2 mins, add Red Chili Powder,Coriander Powder and Pav Bhaji Masala Powder (or Garam Masala Powder).

Add Salt. Add some water and continue to cook Masala (Bhunao process). We have cooked Masala for about 6 mins or until Oil begins to ooze out.

Add Green Peas and mix. Add some water while cooking green peas. Lower the heat and cook covered.

Uncover after 2 mins. Frozen Green peas take about 2-3 mins to get cooked. Fresh Green Peas would take little longer.

Add mashed potatoes and mix well. Add Salt, coriander leaves and mash well.

Finally add Chat Masala and give a final mix. Sandwich filling is ready

All the ingredients (Potato-Peas stuffing, Green Chutney and Butter) are ready.

Take 2 bread slices. Apply butter on each slice. Ensure butter is at room temperature so that you could apply it easily. Apply Green Chutney on each slice.

Now apply Potato-Peas mixture. Apply evenly.Ensure that the layer is not too thick.

Grate cheese on this filling. Sandwich is ready. Let’s toast it

We will use a toaster for making this sandwich. These gas toaster are easily available in market. Grease with some butter. Place this sandwich inside toaster.

Let’s toast this sandwich now. Toast on medium heat from both sides. Toast from both sides for 3-4 mins. Similarly toast other sandwiches

Let’s make this sandwich on a grill pan. Grease grill pan with butter. Place sandwich on grill pan. After 2-3 mins, grill from other side

Ingredients
  • 5 Large=450gms Boiled Potatoes (Peeled)
  • ½ Cup=100gms forzen Green Peas
  • 5-6 Cloves of Garlic
  • 3 Green Chilies
  • 1 inch Ginger root (coarsely ground 3,4,5)
  • 1 small=60 gms Onion finely chopped
  • ¼ th Cup fresh Coriander leaves (finley chopped)
  • 6 Bread Slices
  • Butter
  • 3 Cheese Cubes
  • Cooking Oil
  • Green Chutney (Coriander Chutney)
  • Salt
  • ½ tsp Mustard Seeds
  • 1 tsp Cumin Seeds
  • ½ tsp Turmeric Powder
  • 2 tsp Red Chili Powder
  • ¼th tsp Asafoetida Powder
  • 1 tsp Pav Bhaji Masala (or Garam Masala Powder)
  • 1 tsp Coriander Powder
  • ½ tsp Chat Masala Powder (or 1 tsp Lime juice)
