Officially, India has no designated national vegetable. If there would have been any, my vote would go for Potato. Here is a guy, who is loved across the board. He is loved by vegetarians, non-vegetarians, and even those nasty kids who hate the sight of any vegetables in their dinner plates find themselves at peace with this ubiquitous veggie.

My Mom admits that I was that nasty kid and was quite hard to please due to my bad eating habits. Though she was a good cook, she had hard time trying to cope up with what I liked or disliked in my lunch box. So mom and me came to a middle ground agreement , days when I had to carry some veggies that I disfavored, she would give me a small tiffin box with potatoes as accompaniment. She had mastered a wide range of accompaniment dishes like “Maharashtrian Pivali Batata Bhaji” (Boiled Potato cooked with tumeric), crispy Potato wedges and potatoes tossed in cumin seeds and red chilly powder (Jeera Aloo).

Recipe mentioned in previous paragraph “Jeera Aloo” is our today’s recipe of interest. In this recipe I make use of microwave for making Jeera Aloo. This makes the preparation more healthier, due to the fact that a very minimal amount of Oil is used for making it. It takes less than 10 mins to make them. Just set the appropriate microwave power level, set the timer with dial and sit back. You will have a simple but delicious preparation ready in no time. We make this Jeera Aloo on those evenings or Sunday lunch, when we are in no mood to cook any elaborate recipes, and very quickly need to wind up with our food preparation.
