Cracker-Sandwich

Many times we are faced with situation when we have a surprise guest at home and limited resources in kitchen. I was faced with this dilemma recently.

On Saturday evening, few of my office colleagues who are also my best buddies decided to pay a surprise visit to me. After having spent first few mins in catching up, I excused myself and sneaked into kitchen to see what I can quickly prepare for my friends. To my utter disappointment, most of supplies were exhausted as it was month end and I had planned to refill my essentials next day. So I stood there with refrigerator door open and racks empty. Then it caught my gaze. It rested in one of the jars at the corner of the fridge. Its taste still fresh in my mind and on my taste bud cells. I had whipped up some fresh mayonnaise this morning and had it in my brunch with my corn sandwiches. I grabbed the jar from the fridge and pulled a packet of cracker biscuits. I made a quick bite cracker sandwich which is not only super easy to make but also tastes great.

Quite often we hear the usual advice of shunning away from mayonnaise as it being an unhealthy monster with tons of calories. These advises are somewhat true and you would want to listen to them if you have been watching yours every single calorie intake very diligently. However, I like to consume my mayonnaise in moderation and it does not hurts. I prefer to have a tablespoon of this condiment applied to my sandwiches to enhance its flavor. The store bought mayonnaise is considered an unhealthy option considering it has higher fat content and added preservatives to increase its shelf life. To avoid this you can make some fresh mayo at home, as it requires less ingredients and is definitely not as unhealthy as the store bought version. However, home-made mayo will not stay longer and will have to be consumed within a week.

The quick bite cracker sandwich was a definite hit and so I thought I would share this recipe here. If you have some friends paying you surprise visit and you do not want to spend your time in kitchen, you can quickly make this cracker sandwich. This will give you plenty of time to catch up with your buddies and is a perfect crispy conversation starter.

Cracker Sandwich

Prep time:  10 mins

Total time:  10 mins

Ingredients
  • 8 salted Cracker biscuits
  • 4 tbsp Mayonnaise
  • 1 tbsp tomato ketchup
  • 1 tbsp milk
  • ¼ tsp dried basil
  • ¼ tsp black pepper powder
  • ¼ tsp dried oregano
  • ¼ tsp shredded garlic
  • ¼ tsp salt
Instructions
  1. Make a spread for cracker sandwich.Take Mayonnaise in a large bowl.Add tomato ketchup,milk,garlic,Salt,dried oregano,dried basil,black pepper powder.
  2. Mix all ingredients.
  3. Now apply spread on one of the surfaces of a biscuit.
  4. Now place other biscuit on top of first biscuit to form a shape of diamond.
  5. Garnish cracker sandwich with chili flakes and oregano.This is a perfect snack recipe
