Instant Dhokla recipe- How to make Rava Dhokla- Kali Mirch by Smita

Ingredients
1 Cup=200gms Fine Semolina (Bombay Rava)
¾th Cup=180gms Curd
4 Green Chilies
½-inch Ginger root
½-tsp Salt
½ Lemon Juice
1½-tsp Sugar
¼th Cup Fresh Coriander Leaves
2 Sachets Eno regular Fruit Salt- 5gms each
½-tsp Mustard Seeds
1-tsp White Sesame Seeds
Pinch of Asafoetida Powder
10-12 Curry Leaves
1 Green Chili- finely chopped
¼th-tsp Red Chili Powder
1-2 tbsp Cooking Oil
Water as required
Instructions
Grind Ginger slices, Green Chilies and Coriander Leaves into a coarse paste. Do not add water while grinding.
In a large bowl, put Curd. Add Green Masala paste, Salt, Sugar and lemon juice. Whisk this mixture well until we get rid of lumps from the curd.
Add ½ cup water to this mixture and whisk well. Now, add Semolina gradually and keep whisking to prevent formation of any lumps. Add 1-tsp Cooking Oil and mix well.
Add ¼th Cup Water and mix well. Keep this batter aside for 15 mins.
Boil 2 Cups Water in a Pressure Cooker. After 15 mins, grease pressure cooker container with some Oil. Now add Eno fruit Salt, 1-2 tsp water and mix well. Pour this batter in the greased container.
Now place this container in Pressure cooker. Close Pressure cooker and remember to remove its whistle. Cook on High heat for 2 mins. After 2 mins, lower the heat and cook Dhokla batter for 12-13 mins.
We have cooked Dhokla for 15 mins on low heat. Remove from heat and wait for couple of mins. After 2 mins, we can open the pressure cooker and insert a knife in the cooked Dhokla. If it comes out clean, we can be sure that batter is cooked well.
After dhokla has cooled down completely, we can try to bring it out from the container. Loosen its sides by pulling it towards the center by your fingers. Tap and remove from the container.
After Dhokla is demolded, we can sprinkle some red chili powder on it (optional). Cut it into desired shapes (square or rectanglular shape)
Let's prepare a flavorful Tadka. Heat 1½ tbsp Cooking Oil in a pan and add white sesame seeds. Cook until it becomes brown in color. Add Mustard Seeds, Asafoetida Powder, Green Chilies and Curry Leaves. Pour this Tadka on Dhokla.
Delicious and Healthy Instant Rava Dhokla is ready to be served. Serve hot.
