Paneer Tikka Grilled Sandwich

Ingredients
  • 1 Pack of White/Brown Bread
  • 250 gms Cottage Cheese (Paneer)- cut into cubes
  • 1 small=50 gms Onion-finely chopped
  • 1 medium sized=70 gms Capsicum- cut into cubes
  • ½ cup=75 gms Hung Curd-made from 125 gms Curd- hung in a muslin cloth for 30 mins
  • Coriander Chutney
  • Butter
  • 1-tbsp Ginger Garlic Paste
  • ¼th-tsp Turmeric Powder
  • 1-tsp Kashmiri Red Chili Powder
  • ½-tsp Coriander Powder
  • ½-tsp Garam Masala Powder
  • ½-tsp Chat Masala Powder
  • 2-tsp Tandoori Masala Powder
  • 1-tbsp Cooking Oil
  • Salt
Instructions
  1. Now we will make a marinade for Paneer. In a large bowl, put Curd. Add Ginger-Garlic Paste, Turmeric Powder, Kashmiri Red Chili Powder, Coriander Powder, Garam Masala Powder, Chat Masala, Tandoori Masala Powder. Now add Salt to taste and mix well. Marinade is now ready. Ensure there are no lumps in this marinade.
  2. Add Paneer Cubes, Capsicum cubes and chopped Onions and mix well. Let this marinade rest for 15 mins.
  3. After 15 mins, put a pan on heat. Add 1-tbsp Oil. After the Oil gets heated, add marinated Paneer. Cook on medium heat for a min. Lower the heat and cook covered.
  4. Lower the heat and cook covered.
  5. It's almost cooked and ready now. We will cook Paneer for couple of more mins to remove excess moisture. We have cooked Paneer for 2 mins and have removed excess moisture. This is a perfect coating consistency of the filling. If we cook more than this, then masala will become dry and we will not be able to apply the filling between the bread slices. Remove from heat and allow it to cool down completely.
  6. Let's assemble the sandwiches. We have taken 4 white bread slices and will be making 2 sandwiches now for this video. Apply soft butter on both the slices. In a sandwich always use soft butter and not melted butter for applying on the slices.
  7. Now apply green coriander chutney on one of the slices. Now put some Paneer filling on this slice. Gently press to level the filling and make an even layer. Now, cover this slice with other slice. Similarly, we will make other sandwich and then grill them together.
  8. Heat grill pan on high heat. If you don't have grill pan, you can even use your regular tawa for making sandwiches. Put some butter and smear the tawa or grill pan with this butter. Now place a sandwich in the Pan. Grill on low-medium heat for 2 mins.
  9. After 2 mins, apply some butter on top. Apply some butter in the pan too. Once the underside has grilled, change sides and grill the top side. Gently press with a spatula to get nice grill marks on the slices. After 2 more mins, remove sandwich from the pan.
  10. Similarly grill remaining sandwiches.
  11. Sandwiches are ready to be served. Cut into triangles or squares
  12. A bit tangy and spicy Paneer Tikka Sandwiches are ready. You can pack it in an aluminum foil and give it to your kids in their lunch box. This is my favorite evening snack that I enjoy with a cup of coffee
