  • 1½ Cups=200gms Plain Flour
  • ½ tsp Carom Seeds
  • Salt
  • Cooking Oil
  • 3 Hard Boiled Eggs
  • 2 Green Chilies-finely chopped
  • ½ tsp Crushed Peppercorns
  • 1 tsp Lime Juice
  • 2 tbsp Chopped Coriander Leaves
  • 1 tbsp Raisins-finely chopped
  1. We will now knead dough with plain flour. Use a large flat dish. Add Plain Flour, Add Salt, Carom Seeds and 1 tbsp hot Oil. Mix the ingredients with your palms. Rub the flour between your palms
  2. After all the ingredients have mixed well, add water and knead into dough. Add some water and knead. Do not add too much water. Plain flour dough is ready. We have used ½ Cup water for kneading. Apply some Oil and knock the dough for some more time. Stretch and Pull the dough. Apply Oil 3-4 times and stretch and pull. After knocking the dough for 4-5mins, it's ready. Cover and let it rest for 10 mins.
  3. Let's prepare the egg stuffing. We will start with grating the boiled eggs. Use medium side of grater. Add Salt to taste, crushed peppercorns, chopped coriander leaves, chopped Chilies, chopped raisins and lime juice and mix well.
  4. Sweetness of raisins adds into the flavor of these Kachoris. You can also add red chili powder, dry mango powder and chat masala powder as per your taste buds
  5. Egg stuffing and Plain flour dough is ready. Pull a small lemon sized portion from dough. Flatten this ball between your palms. Give it a shape of a bowl. Press and stretch at the edges to give it a shape of a bowl. Put a spoonful of stuffing into this bowl. Gradually bring in the edges to the center. You can seal it like a Modak.
  6. Shape into roundels. Kachori is ready. Similarly, make all the Kachoris. In this measurements, we can make 12-15 Kachoris.
  7. Let's fry Kachoris. Heat Oil in a large Pan for frying. Heat Oil on high heat and then lower the heat while frying Kachoris. Gradually lower the Kachoris in hot Oil
  8. Always fry on low heat. Fry until Kachoris become golden brown in color. We have fried Kachoris from all sides for almost 5 mins. Remove from Oil. Similarly fry all Kachoris
  9. Yummy Kachoris are ready. Let's serve them hot
