Grind Ginger, Chilies and Garlic into a coarse paste (use 1-2 tbsp water)
Mash Boiled potatoes with a masher to get rid of all the lumps.
Let's make the filling for the sandwich. Heat 2 tbsp Cooking Oil in a pan. Add 1 tbsp butter. Allow butter to melt completely. Add Mustard Seeds and allow it to splutter. Add Cumin Seeds, asafoetida powder and chopped Onions. Let Onions become soft
Onions become soft in about 4 mins. Add Turmeric Powder,Ground Masala paste and Coriander leaves and mix well. After 2 mins, add Red Chili Powder,Coriander Powder and Pav Bhaji Masala Powder (or Garam Masala Powder). Add Salt. Add some water and continue to cook Masala (Bhunao process). We have cooked Masala for about 6 mins or until Oil begins to ooze out.
Add Green Peas and mix. Add some water while cooking green peas. Lower the heat and cook covered. Uncover after 2 mins. Frozen Green peas take about 2-3 mins to get cooked. Fresh Green Peas would take little longer.
Add mashed potatoes and mix well. Add Salt, coriander leaves and mash well. Finally add Chat Masala and give a final mix. Sandwich filling is ready
All the ingredients (Potato-Peas stuffing, Green Chutney and Butter) are ready.
Take 2 bread slices. Apply butter on each slice. Ensure butter is at room temperature so that you could apply it easily. Apply Green Chutney on each slice. Now apply Potato-Peas mixture. Apply evenly.Ensure that the layer is not too thick. Grate cheese on this filling. Sandwich is ready. Let's toast it
We will use a toaster for making this sandwich. These gas toaster are easily available in market. Grease with some butter. Place this sandwich inside toaster. Let's toast this sandwich now. Toast on medium heat from both sides. Toast from both sides for 3-4 mins. Similarly toast other sandwiches
Let's make this sandwich on a grill pan. Grease grill pan with butter. Place sandwich on grill pan. After 2-3 mins, grill from other side
