- 225 grams grated fresh Coconut
- 15 Kokum/Amsul rinds
- 20 Black Peppercorns
- 1 tsp Cumin Seeds
- 10-12 Cloves of Garlic
- 2 Green Chilies
- Chopped Coriander Leaves for garnishing
- Salt to taste
- Soak Kokum rinds in ½ cup lukewarm water for 15 mins
- In a blender jar put grated coconut. Add garlic, cumin seeds, black peppercorns, green chilies. Grind into a fine paste with 1 cup of water.
- Remove the grounded paste into a strainer. Gently squeeze out the coconut milk. We have squeezed out 1st milk extract
- Add ½ cup water and grind into fine paste. Squeeze out the coconut milk (2nd extract)
- Add ½ cup water and grind into fine paste. Squeeze out the coconut milk (3rd extract)
- Discard grated coconut
- Squeeze the Kokum rinds with your fingers and run the kokum extract through a sieve.
- Add salt to coconut milk. Add kokum extract and stir.
- Refrigerate Solkadhi and serve chilled
- Solkadhi is an essential part of Goan-Konkani meal. It aids in digestion.
