- 200 gms Okra/Lady's Finger/Bhindi.Wash and pat dry the Okra before cutting it into small pieces.
- 1 medium sized onion cut lengthwise
- 3-4 green chillies finely cut
- 7-8 cloves of garlic finely chopped
- 1 tspoon turmeric powder
- 2-3 kokum
- ½ cup freshly grated coconut
- Cooking Oil
- Salt
- Heat 2 tbspoon oil in a pan.Add chopped garlic and roast until it turns slighty brown.
- When garlic turn brown, add chillies and chopped Onions and roast until it becomes tender.
- When Onions turn tender, add turmeric powder and stir for a min.Ensure that Onions remain tender and do not become brown.
- After a min, add Okra/Bhindi and stir it nicely.
- Cook Bhindi uncovered.Stir Bhindi frequently to prevent it from getting burnt.
- Bhindi would get cooked in 4-5 mins.Now add salt as per taste, and shredded kokum. Mix them nicely.
- Stir Bhindi for a min and then turn off the flame.Now add freshly grated coconut and mix it well.
- A perfect Lunchbox recipe that can be enjoyed with Roti.
