Pav Bhaji Masala

Ingredients
  • 8 dried red chilies (medium spicy)
  • 4 tbsp whole coriander seeds
  • 2 tbsp dry mango powder (amchoor)
  • 2 tbsp cumin seeds
  • 1 tbsp fennel seeds
  • 4 cloves
  • 1 tsp black peppercorns
  • 2 star anise
  • 5 black cardamom
  • ½ tsp turmeric powder
  • 1 inch cinnamon stick
Instructions
  1. We must dry roast all ingredients (except turmeric powder).
  2. Roast ingredients until it changes it color and emanates a pleasant aroma.
  3. Turn off the heat.Roast dry mango powder in the hot pan.Dry roast for 30 seconds.
  4. Allow all ingredients to cool down.Grind ingredients into fine powder.
  5. Store in air tight container.This masala can be used in preparations like Pav Bhaji and Tava Pulav.
