Lakhnawi Vegetable Biryani

  • 350 grams long grain basmati rice soaked in water for 30 minutes
  • 100 gram cauliflower florets
  • 100 grams french beans cut into pieces of 1 inch length
  • 100 grams carrots cut into lengths (1-1.5 inches)
  • 100 grams green peas
  • 200 grams onions cut into lengths
  • 6-7 green chilies cut into lengths
  • 100 gram curd (whisked)
  • ½ cup fresh coriander finely chopped
  • ½ cup fresh mint leaves finely chopped
  • 6-8 cloves
  • 1-1.5 inches cinnamon stick
  • 4 green cardamom
  • 2-3 flakes of mace
  • 1 tbsp ginger paste
  • 2 tbsp garlic paste
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • few saffron strands soaked in ½ cup warm milk
  • 1 tbsp kewra(screwpine) water
  • Cooking Oil
  • 2-3 tbsp clarified butter
  • salt
  1. In a large pan, heat 2 liters of water.Season the water with 1 tsp salt.
  2. Add cloves, cinnamon, green cardamom, mace flakes. Finally add rice and allow it to cook on medium flame.
  3. We will cook rice until it is 70 % cooked. Strain the cooked rice. Spread the rice in a large plate
  4. We will steam the vegetables now.Boil 2 cups of water in a pan. Add green peas, cauliflower florets. Add carrots, french beans.
  5. Allow the vegetables to simmer with boiling water. We will cook veggies for 5 minutes.Drain the water and keep the veggies aside.
  6. Heat 4 tbsp Oil in a Biryani Handi. Add sliced onions and fry until it turns golden brown. Onions turn golden brown in about 10 minutes.
  7. Add garlic paste, ginger paste.Bhunao for a minute. Now add green chilies, some coriander, some mint leaves.Bhunao for another half a minute.
  8. Now add curd. Allow it to simmer on low heat for a minute.Now add turmeric powder,red chili powder, salt to taste.Bhunao for 1-2 minutes.
  9. Add steamed veggies to the Masala.Bhunao for 2-3 minutes.3 minutes later turn off the flame.Let us now assemble biryani.
  10. Meanwhile, put an iron griddle on flame. Remove half of the cooked vegetables from the pan.
  11. Spread half of the cooked rice on top of vegetable layer.Spread the rice evenly.Add some mint leaves.Add some chopped coriander leaves.Pour some saffron infused milk.Pour some clarified butter.This completes the first layer.
  12. For second layer:Spread remaining veggies .Spread it evenly.Now spread remaining rice.Spread the rice evenly.Now add mint leaves, coriander leaves.Pour clarified butter, Saffron infused milk.Finally add screwpine water(kewra water). This completes the second and final layer
  13. Let's cover the edges of lid with dough.Seal the pot with this lid
  14. We will keep the sealed pot on direct high flame. Now put the sealed pot on iron griddle for 2 minutes and cook it on slow heat for 8 minutes.
  15. Lakhnawi Vegetable biryani can be served with aloo-pudina raita or veg raita
